Tomato, Mozzarella and Basil Salad
The salad with tomatoes, Mozzarella and Basil is an Italian classic. It is best prepared with fresh basil. However, basil can be difficult to grow in many parts of the world and may be unaffordable and not environmentally friendly when imported and wrapped in plastic. There is an alternative which is Pesto, which I use in the example on the picture, and can be found in glass container. I use some organic pesto, which is low salt, and made only of salt olive oil and basil.
The sauce is with olive oil and vinegar. I generally like balsamic vinegar for such tomato-based salads with olive oil.
